Sabores Mexicana is written by Carlos — a professional Mexican chef with over two decades of hands-on experience cooking across four continents.

Carlos grew up in a household where the kitchen was the heart of everything. From watching his grandmother press fresh tortillas before sunrise to learning the patience required to slow-cook a proper mole negro, food was never just sustenance — it was identity.

After training formally in culinary arts, Carlos spent years working in professional kitchens across Mexico, Europe, the United States, and Asia. He has cooked in Michelin-starred restaurants, run his own kitchen, catered private events, and taught cooking workshops to home cooks who simply wanted to learn how to make something real.

What sets Carlos apart isn’t just his technical skill — it’s his deep respect for where food comes from. He believes that a great dish starts long before you turn on the stove. It starts with understanding the region, the ingredient, and the people behind it.

After two decades on the move, Carlos started Sabores Mexicana as a way to come home — to document the recipes he grew up with, the techniques he spent years mastering, and the stories that make Mexican food one of the most celebrated cuisines in the world.
